Easy Layered Egg Bake

Here is a recipe that was introduced to our family by our Spanish exchange student in 1996.  It has been made MANY times since then and we all really enjoy it.  I find that it makes a good breakfast or lunch option (great for company because it is make ahead) and is even a good appetiser for parties.

For many years, we've used a store bought pie crust, Kraft yellow and white slices, and ham lunch meat in a perfect rectangle.  This is wonderful, but today I used a homemade pie crust and "fancy" ham lunch meat because that was what I had and it was just as good, if not better.  The Kraft coupon deal has my cheese drawer stuffed and Bi Lo had their whipping cream BOGO, so this recipe was on the brain! I'd love to try it with "real" cheese as well as the rest of the ingredients, so I may try that again soon.

Easy Layered Egg Bake (will always be known as the "Ana cheesy egg thing" by my family!)

1 pie crust, homemade or store bought
9 slices of yellow cheese (singles)
9 slices of white cheese
1 small package of ham lunch meat
3 eggs
1/2 pint whipping cream

-Preheat oven to 325 degrees

-Press crust into a 9x13 ungreased pan, only coming up the side maybe 1/2 inch or less

-Layer all of the yellow cheese on top

-Top with 2 layers of ham

-Layer all of the white cheese

-Mix the cream and eggs together and pour over the top.

-Bake about 40-45 minutes uncovered.  It will get a few bubbles in it and they may turn
brown, but will still taste and look  delicious. Best when served cold!
